Hawaiian Entrees

Paniolo Brisket (Very Popular – Frequently requested.)
12 hr. slow smoked brisket seasoned with Hawaiian salt, pepper, onion and finished wrapped in Banana Leaf to capture all the smoke and juiciness. (6 oz. serving per)

Kalua Roasted Pork
Slow roasted and smoked in banana leaf and stump and flavored with Hawaiian seasonings then shredded in natural juices. (6 oz. serving per)

Huli Huli Chicken
Huli in Hawaiian means to turn. Chicken thighs marinated semi-sweet and consistently turned over flame to perfection.

Pulehu Ribs (Currently not available on short notice.)
Grilled Beef Short Ribs marinated in Ginger, Green Onion, Hawaiian Salt, Pepper and Shoyu

Pork Spareribs (Currently not available on short notice.)
Slow Smoked with Hawaiian Seasonings, then wrapped and finished with your choice of sweet or savory vinegar sauce.

Hawaiian Style Beef Stew
This isn’t your standard beef stew. Hawaiian style beef chunks simmered in a tomato base with chunks of potatoes, carrots, celery, and onion.  Usually served over white rice and a pillow on your side cause you gonna go “Moi Moi” – Sleep.)

    Hawaiian Sides

    White Rice (Typical Local Hawaiian/Asian Style)
    Sticky Rice (Steamed Medium Grain) – Typical of Local Hawaiian eats.

    Classic Hawaiian Style Mac Salad
    Simple Macaroni pasta mixed with mayonnaise, shredded carrots, seasonings.

    Broke Da Mouth – Potato/Mac Salad (Favorite)
    This is a meal in itself!  Potatoes, Macaroni, onions, celery, carrots, eggs, seasonings.  (Only Best Food Mayo used on this!)

    Simply Steamed Sweet Potatoes
    Ok, Not so simple but still deliciously sliced, steamed, and basted with a butter and herbs.

    Lomi Lomi Salmon (2-week minimal notice) – Market Pricing.
    Lomi in Hawaiian means to massage.  This salmon is massaged in Hawaiian salt then cubed and mixed with fresh cubed tomato, white onions, and green onions.  (It is Hawaiian custom to serve with poi to balance the flavor. This is also sometimes referred to as Hawaiian salsa.)

    Hawaiian Taro Root – Traditional staple in Hawaiian culture. Taro is pounded to a paste and then blended with water for a thinner consistency.  (Great with salty dishes or if you are really local just eat as is!)

    American Entrees

    Prime Rib (Very Popular)
    Rosemary and Thyme complimented with Hawaiian Sea Salt.  Slow Roasted to medium and allowing the juices to do their magic.
    Additional Charge for Carving Station attendants per hour rate $25.

    Slow Roasted Tri Tip
    Herb Crusted, Cooked medium to well, Sliced juicy and thin
     
    Spaghetti w/ Meat Sauce – (Recipe of my Catholic School days with the Nuns that taught me. No bottled sauce.)
    Slow simmered sweet plum tomatoes, chopped onions, peppers, basil, and Italian seasoning with a hint of sugar.  Ground beef mixed with Ground Italian sausage to beef it up.
    Additional charge: Sliced Italian Sausage 

    Chicken Marsala w/ Penne Pasta
    Beautifully seasoned and coated Chicken breast seared then removed. White mushrooms and garlic sauteed in Marsala wine and drenched over the Chicken as it finishes and thickens.  (Served over a simple Penne Pasta or Penne can be served on the side.)

    Mashed Potatoes
    Creamy, buttery and served with brown gravy on the side

    Roasted Potatoes
    Red Potatoes herb seasoned w/olive oil and roasted crispy out and tender in.

    Steamed Green Beans w/Roasted Garlic
    Beautiful Cut Green Beans steamed and finished with a garlic and olive oil glaze.

    Seasonal Steamed Vegetable Medley
    Classic steamed and finished with a garlic, Italian Extra Virgin olive oil glaze.

      Fresh Spring Salad Mixed Green
      Mixture of Romaine, Spring Leaf, Shredded Carrots, and Cherry tomatoes.
